Development of strategies for food security in the local markets of Manta

This study analyzes food safety in the Central Municipal and Los Esteros markets of Manta, Ecuador—key spaces for local food supply that, despite existing regulations, present significant deficiencies in infrastructure, hygiene, and sanitary control. The objective was to assess hygienic-sanitary conditions and propose improvement strategies. A mixed-methods approach was used, including checklists, 370 consumer surveys, and interviews with market administrators and vendors, conducted between April and May 2025 under ethical guidelines. Data analysis using InfoStat revealed persistent consumer concerns regarding food hygiene and safety, with issues such as the presence of waste, inadequate refrigeration, poor product preservation, and lack of staff training. While consumers appreciate affordability and freshness, they also reported negative experiences related to food quality and handling. The results underscore the urgent need to improve infrastructure, strengthen sanitary controls, and promote continuous training for vendors to ensure safer food and restore consumer confidence in traditional markets. The study proposes context-specific strategies to foster healthier and more sustainable market environments for the population of Manta.
